White fish are mainly used for ceviche (mostly sea bass in our restaurant). Of course, ceviche can also be prepared with salmon or tuna! The raw fish is marinated in Leche de Tigre. This is a brew made from lime juice, ginger, ajíes (chillies) and more, which cooks the raw fish. Sounds crazy, but it's true. Fans of sushi will love ceviche too! Ceviche is not only delicious, but also very healthy! Other spellings for Ceviche are also "Seviche" or "Cebiche".
